Onesies Highland Tea

Burns Night isn't far away now, so how many are you are starting to think about the celebratory table?
If you're not one for haggis, why not alternate with a Highland Tea instead?
A Scottish themed afternoon tea is the perfect solution that has something for everyone.
Here's some of our favourite afternoon tea recipes with a Scottish twist;
Millionaire's Shortbread

Ingredients
For the Shortbread;
250g plain flour
100g caster sugar
225g butter
For the Topping;
200g unsalted butter
200g caster sugar
3 tablespoons golden syrup
397g tin of condensed milk
200g dark chocolate (Or milk chocolate - whatever you prefer).
Method
Pre-heat the oven to 170°c /gas3. Lightly grease a 23cm x 32 cm oblong Swiss roll tin.
For the shortbread base, place flour, caster sugar and butter into a food processor and whizz together to a smooth dough.
Using your fingers, press the mixture into the tin and prick all over with a fork.
Chill for 15 minutes before baking in the oven for 25-30 minutes until golden and firm. Set aside to cool.
To make the topping, place unsalted butter,caster sugar, and a tin of condensed milk into a saucepan and stir over a low heat until the butter melts.
Turn the heat up to medium, bring to the boil and then gently bubble the mixture for 5-8 minutes, stirring constantly to prevent catching, until thick and golden brown.
Pour over the cold shortbread in an even layer and leave to cool.
Melt chocolate in a bowl over a pan of simmering water. Pour the chocolate over the cooled toffee and place in the fridge to set.
Remove from the tin and carefully cut into squares.
Scottish Tablet

Ingredients;
1/4 pint water
175g unsalted butter
1lb caster sugar
75g sweetened condensed milk
Method;
Using a fairly large pan, after heating the water, melt in the butter. Before the water reaches the boil, add and thoroughly dissolve in the sugar, stirring often.
Bring the water to the boil and allow to simmer. When simmering, add the condensed milk. The mixture should no be a very light and creamy colour.
Stirring very often, allow to mixture to thicken until it is a deep caramel colour. The texture/consistency of the mixture will change quickly after around 20-30 minutes, from a watery simmer to thicker bubbling. This is where a large pan is handy as the mixture tends to rise a bit when simmering.
To test the mixture, drop a little onto a cold side plate, it should not run and should be thick and sticky after 30 seconds.
Remove from heat and beat mixture for a good 10 mins. pour mixture into a shallow sided tray (10"x6") there should be enough mixture for it to be about 1cm thick. Allow to cool for 30mins, even in the freezer. slice and enjoy. (If the mixture does not set, you can bring it back to a simmer and give it a further 5 mins or so)

No afternoon is complete without a nice pot of tea. Whether it be green tea, herbal tea, black tea - it's completely up to you. Nothing finishes off a nice lunch without a good old cup of tea.
To make your afternoon tea extra Scottish, decorate your table in a tartan table cloth (a rug or blanket will do to keep you extra snug), along with tartan serviettes, and candles.
